So like a true food lover...I went a little nuts over the holidays, eating all the yummy turkey, lemon bars, mashed potatoes, candy, enchiladas, ravioli, ice cream (darn you chocolate malted crunch!) etc that I could find...not to mention more bread than any person in their right mind should ever consume.
Now here we are in January 2014 and I have big plans to make right the error of my ways. One of the changes that I am implementing this year is adding a healthy green smoothie or juice into my daily routine along with a small meal or light snack for lunch. While I wait for my Green Vibrance to arrive tomorrow, I went to the farmers market and picked up some fresh kale, carrots, broccoli, cilantro, mint and fruits to begin my juicing adventure.
I made this tasty Tropical Green Smoothie with Kale, Almond Milk, Mangos, Strawberries and Peaches today and posted the recipe below. It gave me just the midday pick-me-up needed to power through the rest of the work day and go full force in kickboxing class :)

Tropical Green Smoothie
- 1 cup Almond Milk
- 4 large Kale leaves
- 1 cup Mango (I use frozen, no added sugars)
- 1/2 cup Strawberries (fresh or frozen) (can substitute w/ fruit of choice)
- 1/2 cup Peaches (fresh or frozen) (can substitute with fruit of choice)
*Use of a high-powered blender is highly recommended ( I use a Vitamix)
♥Tips: If you like thicker smoothies like me, frozen fruit helps thicken your smoothie texture without adding ice. Short on time and can't get your hands on fresh Kale? Trader Joe's sells frozen Kale with all the same nutrients!
Blend on high for about 3 minutes making sure to press the ingredients down into the blender if needed. Serve immediately. Makes about 17 fl oz.
