This is the perfect recipe for a quick and easy side dish. I make this at least once a week and it's to die for!! (Pay attention to the cooking technique, that's the key.)
10 Minute Seared Lemon Asparagus w/ Parmesan
- 1 bunch (around 1lb.) of asparagus, washed & bottoms trimmed
- 2 Tbsp olive oil
- 1 Tbsp water
- 1 lemon
- 2 cloves of garlic
- 1/3 cup parmesan, for garnish
- salt & pepper to taste
On high heat, add the asparagus, olive oil, water and garlic to a large sauté pan. Cook for about 2 minutes uncovered or until the water has almost evaporated.
Using tongs, toss the asparagus then cover the pan and cook for 1 minute.
Remove the lid, add salt & pepper and toss the asparagus again. Put lid back on and repeat until the asparagus are crisp-tender, about 5 minutes. (The asparagus may brown slightly in spots, which adds to the pan-roasted flavor.)
Cut the lemon in half and squeeze into the pan of asparagus, toss to combine. Serve hot, topped with parmesan shavings.
