Everyone has those days where you just can't figure out what to cook for dinner. Whatever it is, you want it to be quick and easy...but you don't want to skimp on taste. My favorite go-to is this lovely Lemon Pasta with Mushrooms and Broccolini that I made up one day after receiving a gift of Royal Hawaiian Seasoning from my Grandma. If you're a lemon fan, this is the perfect meal for you; it's packed with tons of flavor and can easily be dressed up with the meat of your choice (I love it with Chicken, Shrimp and Fish!).
I wanted to share the recipe with you guys for the next time you're hit with one of those "question mark" days. Oh, and if you ever come to my house for dinner and I serve you this dish, you'll know I had no clue what to make you for dinner...but you'll forget after one bite because it's soooo yummy!
Quick Lemon Pasta with Mushrooms and Broccolini
- 1/2 lb pasta of your choice (I use Linguini Fini)
- 4 Tbsp olive oil
- 3 large lemons
- 2 cloves of garlic
- 1/4 cup diced onions
- 1/2 tsp minced garlic (optional...adds an extra kick if you love garlic!)
- 8 oz baby bella mushrooms
- 9 oz broccolini
- 1 tsp salt, 1/2 tsp pepper
- 1 1/2 Tbsp Royal Hawaiian Seasoning (order it here, can also substitute w/ a mixture of equal parts sea salt, cane sugar and lemon pepper...but nothing beats the original!)
- add'l salt & pepper to taste
Bring 5 cups of water to a boil, set aside.
In a large pan add 2 Tbsp olive oil, 3/4 of the Royal Hawaiian Seasoning, salt and pepper. Heat at medium.
Slice the 2 cloves of garlic, onions and mushrooms, add to the pan and sauté until golden brown stirring occasionally (about 7-10 mins).
While the garlic, onions and mushrooms cook, add all of the broccolini to the boiling water and boil for 3 mins. Remove and place the cooked broccolini into a colander to remove any excess water. (Do not turn off the boiling water)
Boil the uncooked pasta in the leftover boiling water (it probably looks a little green due to the broccolini, but that's ok!) and cook al dente (4-5 mins). Drain once complete.
Add the drained broccolini along with the remaining 2 Tbsp olive oil and minced garlic to the pan with the garlic, onions and mushrooms, sauté for about 5-7 mins at med-high heat (a little searing is ok). Reduce heat to med-low and add the juice of 1 1/2 lemons.
Add pasta to the pan and toss everything together. Add the remaining lemon juice and Royal Hawaiian Seasoning. Salt and pepper to taste.
