Sooo, my new friend Melissa brought these incredible little Pumpkin Whoopie Pies to work last week...O M G!!! These things are too good! Soft, cakey cookies with this surprisingly light whipped cream cheese filling...this is a must try for everyone!

Melissa says: I would definitely recommend using some sort of small ice cream scooper type thing so that all the cookies are about the same size (since you need to sandwich them together). And once you plop them onto the baking pan, just flatten them out slightly or even them out. They tend to bake the way they are and don’t really move much after you put them on the baking sheet. Otherwise, the recipe, as written, is pretty good.
